Cannellini Beans Summer Salad for kids? YESS!
It’s the right combination of flavors, very colorful and with a refreshing taste. Cannellini beans are great for little ones: with a natural sweet background flavor, creamy, with a delicate skin that can be eaten with no problems. They are also loaded with proteins and a great baby/toddler food from a nutritional point of view. Only one comment. Do not overdo as they are beans, aka tons of fiber to digest. So. Small amounts!
I started preparing this recipe to my kids when they were toddlers. I tried different ways: already mixed, ingredients separated, dressing on the side. They now love it as a full salad, everything included!
For toddlers you can also try to serve it both mixed and deconstructed.
It doesn’t take extra time. When you add the ingredients for the whole family, have your toddler plate next to you so that you will simply remove one tablespoon (or one teaspoon pending your little one’s appetite) of each ingredient and place it in your toddler plate, one next to the other without mixing.
For the dressing mix the lemon + oil + salt in a small container and let your little one decide if to add it or not. I use silicone little containers (the one you see in my lunchboxes) to serve the dressing separately to my kids.
You can also use the muffin tin container for a fun “mix and choose” toddler meal.
Giving your toddler options to choose from, makes them feel more in control and more open to try new foods.

2 cans cannellini beans, drained
1 1/2 cup cherry tomatoes
1/4 cup red onion, minced
1/2 cup feta cheese in crumbles
1/2 lemon, juice
3 Tbsp olive oil
1 Tbsp cilantro, minced
1 Tbsp parsley, minced
1/2 tsp sea salt (less if the cannellini beans are salted, check the label)
