Hello lovely people! It has been a while and since the last time I shared a recipe with you and the life as we knew it simply changed. We are currently at our 4th week of lockdown. School-from-home is the new reality and #stayathome is the only way we have to help limiting the spread of the virus. I really hope everyone of you and your loved ones are fine and safe. I also hope there will be a cure or vaccine soon so that lives will be spared and life will be somehow back if not to normal to a new normal.
When I developed this recipe I had in mind my little one upcoming birthday party. It was a nice kid friendly recipe to prepare for his big day and enjoy with his friends. Sunday was his birthday and as you can imagine we celebrated in a different way.
Today I would like to share with you the lovely baked oatmeal cups recipe, it can be enjoyed at breakfast. In the next few days I would like to share with you how we celebrated Alex’s 7th bday at home with the lockdown. It was special, fun and unexpected. We really enjoyed it and he was happy. I really think we need to appreciate what we have in this crazy situation and try to make our best out of these circumstances. The oatmeal cups are naturally vegan and gluten free, appropriate for little ones starting from 9 months of age if you are following a baby led weaning approach. The cups by themselves are a lovely finger food. You can fill the cups in many ways. I shared three easy ideas: yogurt and fruit + applesauce and banana + almond butter and chocolate spread with chocolate chips on top. Choose the one that your little one will enjoy the most and be creative adding or switching ingredients.
It really takes 20min total to prepare the cups 🙂 Place the rolled oats in a food processor and pulse few seconds to transform them in breadcrumb consistency.
Transfer the oat four obtained in a bowl. Add all the other ingredients: banana, vanilla, cinnamon, coconut oil. The more ripe the banana, the better as it gives the overall sweetness to the recipe.
With a fork combine together the ingredients in order to create a sticky compact dough.
Grease your hands with a bit of coconut oil. Take 1 tbsp of the dough and flatten it with your fingers. Fill one hole of a muffin tin creating a cup.
Keep filling the holes of the muffin, spread on the sides and compact the mix with a your fingers or a tablespoon. The quantity suggested will make approx 10 cups.
Bake in preheated oven to 350F for 12min. Let them cool down completely so that they will harden more.
Fill the cups with your choice of ingredients. I opted for:
- Plain greek yogurt and fresh berries on top. You can even drizzle some honey on top (for babies under 12 months of age, substitute the honey with maple syrup or skip it).
- Applesauce and banana pieces. This is a very baby friendly combo.
- Almond butter, chocolate spread and chocolate chips. I don’t need to say that my kids loved this combo 🙂
I would suggest to assemble only the cups that you know you will enjoy. The cups will get soft if you leave the filling in for some hours or overnight.
CAN I USE OTHER COMBOS?
Of course! My suggestion is to combine a creamy ingredient at the base (yogurt, fruit puree, nut butter, chocolate cream, custard, whipped cream, coconut cream, marmalade, jam) with an ingredient that has more texture on top (fresh fruit, shaved or crashed nuts, chocolate chips, coconut flakes).
CAN I STORE THE CUPS OR FREEZE THEM?
The cups can be prepared ahead of time and stored on the countertop for few days and enjoyed when you are ready simply filling and serving them. I usually save them in an air tight container.
You can also freeze the cups in an air tight container for up to 3 months. Thaw them simply removing them from the freezer and placing on a plate for a good 30min. Or, if you need them sooner, place them in a toaster for few minutes.

- 1 cup rolled oats
- 1 banana, ripe
- 1 tsp vanilla extract
- 1/2 tsp cinnamon
- 1/2 Tbsp coconut oil
- 1/2 tsp almond butter
- 1/2 tsp chocolate spread
- 3 chocolate chips
- 2 tsp plain greek yogurt
- 1 strawberry diced in tiny pieces
- 3 blueberries cut it in pieces if serving to babies
- 1 tbsp apple sauce
- 1 tbsp banana pieces
Preheart the oven to 350F.
Place the oats in a food processor and pulse few seconds to obtain a breadcrumb consistency.
Transfer the oat flour in a bowl and add the banana, vanilla, cinnamon, coconut oil.
Combine the ingredients well with a fork to obtain a compact sticky dough.
Grease your hands with some coconut oil.
Fill the holes of a muffin tin with 1 Tablespoon of dough. Spread on the sides and compact the mix with your fingers or a tablespoon creating a cup.
Bake in preheated oven to 350F for 12min. Let the cups cool down completely before filling them.
Place a teaspoon of the creamy filling you decided to use (yogurt, almond butter, applesauce, chocolate spread) and top with the chunky texture second filling on top (fresh fruit, banana, chocolate chiops, shaved almonds..)
