Chicken Masala with Veggies. Such an easy and nour

Chicken Masala with Veggies. Such an easy and nourishing dinner meal for the whole family, toddler included!
Loaded with veggies and flavor. I saved the stories from last night into my highlights and here the full recipe:

INGREDIENTS:
1 lb. chicken breast cut in cubes
2 small carrots, peeled and chopped in small pieces
4 small zucchini, chopped in small pieces
3 small potatoes, peeled and chopped in small pieces
1 can tomatoes
1 can coconut cream
1 onion, minced
2 cloves garlic, minced
4 Tbsp olive oil
2 1/2 tsp garam masala
1/2 tsp turmeric
1 tsp sea salt

PROCEDURE:
Turn the heat on at medium-high and in a skillet add the onion + garlic and saute' for 2 min.
Add the spices: masala and tumeric. Stir for 1 min.
Add the veggies: zucchini, potatoes, carrots. Stir.
Add tomato can + coconut cream can + 1 can of warm water + sea salt.
Bring to boil, reduce to simmer and cook for 20 min.
Add the chicken in pieces and keep simmering for 15 min. Make sure the chicken pieces are covered by the soup.
Serve warm with some rice as a side.

Toddler Tip: puree the veggies once cooked into a cream and than add the chicken to cook. You will obtain a creamy texture, more toddler friendly.
