  • Orange Lemon Blueberry Scones #eggfree and that means I can enjoy a bite too! 😜
Scones are one of the easiest recipe to prepare: it never fails and you can really personalize the flavor following your taste. I baked a batch last night using some frozen wild blueberries and the zest of a lemon + an orange together for a fruity result: they came out super moist (thanks to the frozen blueberries) and with a lovely citrusy scent. A lovely #afterschoolsnack for the kids or #sweettreat for myself πŸ˜‰

INGREDIENTS:
2 1/2 cups wholegrain flour
1 stick organic butter
1/2 cup coconut sugar or maple syrup
2 1/2 tsp baking powder
1/2 tsp salt
3/4 cup coconut milk
zest 1 lemon
zest 1 orange
1 cup frozen blueberries
2 Tbsp coconut sugar

PROCEDURE:
In a stand mixed add all the ingredients starting from the flour + baking powder + salt + sugar + butter in cubes. It's important that the butter is cold, not room temperature. Add also the zest of the lemon and orange. Let the stand mixer work and slowly add the milk. In few minutes you will obtain a sticky dough. Add the blueberries. 
Prepare a baking sheet lined with some parchment paper. Create small balls of dough (1 Tablespoon of mix each) and flatten them on the parchment paper one next to the other. Sprinkle on top some coconut sugar.
Bake in preheated oven to 400F/180C for 20min.
Remove from the oven and let the scones cool down.
Store in an air tight container on the countertop for 1 week.

  • Test: I made focaccia sandwich bites with ham/cream cheese/avocado/tomato....and  baby spinach. Will the kids remove the spinach? 
They are used to spinach but cooked or in a salad, I’ve started adding one leaf in their sandwich here and there at home. Let’s see how the school experiment goes 🀞🏻🀞🏻 We also have homemade cranberry scones + cucumber + giant strawberries + almonds.

  • Smoothie before heading out to the museum.
Eating out is not always the healthiest choice πŸ™„ museums cafes are definitely getting better but still you really need to compromise a bit 😜
So...an healthy and yummy smoothie is my solution to fill the kids with nutrients before heading out. They will be less hungry when we get there and I will feel better if they will end up eating something  that I don’t not πŸ’― approve πŸ˜‰

Today’s combo: banana + avocado + spinach + almond butter + chia seeds + frozen strawberries/mango/peach/pineapple + local honey + blueberries.

  • Salmon and Broccoli Pasta. That’s a new recipe that was born from a bit of salmon left from last night and the last broccoli left in the fridge 🀣🀣 I love experimenting and this one is definitely a keeper!!
Broccoli and salmon are definitely a super food combo: omega 3 fatty acids + iron + protein. And with the carbs from the pasta we can complete the meal πŸ˜‰

The video is still in my stories!! Ingredients:
1 lb. pasta of your choice
200 gr. Fresh salmon fillet
1 broccoli head
1 Tbsp parsley 
4 garlic cloves minced
1/2 white onion minced
3 Tbsp plain yogurt
3 Tbsp extra virgin olive oil 
Procedure:
In a large pan heat the olive oil with the garlic and onions. SautΓ© 3 min.
Add the broccoli with 1/4 cup warm water. Adjust with salt and cook at low heat for 8 min.
Remove the broccoli and set them apart
In the same pan add 1 Tbsp olive oil and the salmon chopped in small cubes. Cook for 2 min and adjust with a pinch of salt.
Add the broccoli back, stir and switch the heat off.
Cook the pasta following the directions on the packaging. Reserve 1 cup of the boiling water. Drain the pasta and add it to the broccoli salmon mix. Add the yogurt and 1/2 cup of the boiling water you saved.
Combine everything.
If needed, add more of the boiling water saved from the pasta.

Tip: did you know that in order to make the grissini you don’t roll them but only stretch them out??? It’s a fun sensorial activity to make with your kids!
