It's over! We did it! We survived! 484 days or 16

It's over! We did it! We survived!
484 days or 16 months or 1,5 years of having the kids home in virtual learning (little one went back a few hours a day in person last month). What a ride.
It has been intense indeed and challenging and an emotional rollercoaster but I cannot say that it was all that bad.
Being my kids' tutor I was able to assist them academically in a way I would have never done before. I was able to understand their strengths and their weaknesses and support them when and where it was needed.
Our life pace stopped during the lockdown and it's now back to a nice quiet pace. Before everything collapsed it felt like a run between activities, playdates, social gatherings. It was all fun but I think it was too much. Having a weekend with nothing planned, no events to attend to is indeed a good thing after all.
This was the year where the school "Pjs" day was substituted by "dress up" day 🤣
I kind of missed my school lunchboxes but I also appreciated having lunch all together and getting challenged to create quick, fast and yummy lunch ideas for the kids.
Today was our last day of school, summer break is officially started. We are ready for summer adventures here, what about you?

Easy Chicken Veggie Summer Wrap. A great idea when you have some grilled or rotisserie chicken leftover in the fridge.
I prepared it last night for dinner, but it's a great idea for lunch or for a picnic too.
I used some grilled chicken thighs I had in the fridge and added fresh tomatoes and fava beans (leftover too).
You can switch chicken with any other protein of your choice (grilled fish works too or tofu) and also switch fava beans with edamame or white beans or chickpeas.
You can also add cucumbers, but I ran out of them.
A nice addition will also be fresh parsley or cilantro.
For the sauce I used this trusted combo:
Equal quantity of mayo and plain greek yogurt. A squeeze of fresh lemon and a pinch of salt. That's it!

Pita bread, tortilla, piadina, naan bread...you choose! Anything that can be easily rolled and folded.

What you feed or not feed your kids with is highly affected by your food culture. Being Italian I was totally ok giving Parmesan cheese or a tiny bite of good quality prosciutto to my kids since they were babies. Yes, they are both high in sodium, but I always thought that moderation is the key. Not only, it's part of my culinary culture and I think that feeding your kids is also teaching them who you are, where you come from. Through the years of baby food blogging I saw how hot spices are given to little ones very early in central america, how medical spices are added to baby food in India and closeby countries not only to feed but to treat common illnesses in babies and so many other differences. It has been a fascinating learning process that taught me that there is no perfect feeding method or diet, every country has a slightly different approach and they all work!
