Kids can be very peculiar with vegetables…and some of them are definitely not in their “favorites” list. Eggplants are one of them. Maybe because of the skin that stays crunchy even when cooked, maybe because of the flavor of the skin itself or maybe because of the seeds. That’s why I wanted to try a recipe that will put eggplants in the “I love” kid’s list: eggplant rollups.
It’s easy and tasty. The rollups right out of the oven are perfect for this cold weather, or, if you want to let them cool down, they are perfect for summer too!
