Can a double chocolate muffin be not only delicious but somehow healthy? Well, after some testing I’m happy to share with you this recipe that will satisfy your palate and at the same time will not make you feel guilty 🙂
Luca’s bday is coming very soon and he LOVES chocolate (like my husband). Also, he LOVES Batman (his favorite color now is black…very stylish I have to say). I really want to surprise him with his bday cake and I decided I will go for double chocolate healthy muffins with a Batman decoration.
I opted for muffins as I think that it is easier for a 3yrs old kid to grab a muffin instead of a plate with a fork and a slice of cake. I really like this recipe because it really tastes good and it doesn’t contain butter nor oil. I used a mix of all purpose flour and all wheat flour, but you can use 100% all wheat flour. So he will be happy and I will be happy too!!
Also, as cookie and cake decoration is not my specialty, I asked a foodie friend, Hani form Hanielasblog to help me with the Batman decoration. Well, she did an amazing job and I’m going to follow her tutorial on how to decorate my muffins!

For the muffin recipe, here you are the ingredients:
how to make them? easy!!
Let’s start sifting all the dry ingredients: the two flours and the cocoa.
Than add to the dry mix the other dry ingredients: salt, baking powder, baking soda. Mix everything and set it apart.
In another bowl mix together sugar, honey, apple sauce, yogurt. Mix
Add the egg. Mix
Slowly add the dry mix to the wet one. Do not over mix. Add the chocolate chips.
The mix is ready for the oven. 425 F. for 5 minutes and than decrease the temperature at 375 F. for 20 min, up until a toothpick inserted in the center of a muffin will come out dry.
IMPORTANT: I tried to use cupcake liners and it was a big mistake…more than half of the muffins stayed in the liners 🙂 A silicon muffin mold or some cooking spray will work!!
