Spinach Green Pancakes with the blender. Such an easy weekend breakfast for the whole family.
Simply add a bunch of baby spinach to the usual pancake mix and throw all the ingredients in a blender. In 1 minute your pancake mix will be ready to be cooked.

Ingredients:
1 bunch baby spinach
1 cup all purpose flour
1 egg
3 tbsp maple syrup
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
3/4 cup milk
1 Tbsp apple cider vinegar
4 Tbsp coconut oil

Indulgent Chocolate Cake. Super smooth texture, perfect if your little one doesn't like chunky food.
I baked the cake using a loaf pan mold, but you can use muffin tins or even donuts tins! (just bake for less time)

INGREDIENTS:
3 medium eggs
1 cup cane sugar
2/3 cup coconut oil
1/2 cup milk of your choice
1 3/4 cup all-purpose flour
1/2 cup unsweetened cocoa powder
1/2 cup semi-sweet chocolate chips
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 splash vanilla extract

PROCEDURE:
Whisk the eggs with the sugar to obtain a pale yellow foamy mix. Add the coconut oil, milk, vanilla. Combine. Melt the chocolate chips in the microwave for 1 min (30 sec, mix, 30 sec). Add the melted chocolate to the wet ingredients.
Slowly pour in the dry ingredients: flour, cocoa, baking powder, baking soda, salt.
Transfer the batter in a cake mold of your choice. I used a loaf pan mold. Bake in preheated oven to 400F for 40min. The toothpick rule works: if inserting a toothpick in the center of the cake comes out dry, the cake is ready! For a muffin tin or donut tin I would bake for 25/30 min. It should be enough.

Halloween Ghost Pizza!! You just need a cookie cutter and either capers or olives for the eyes 😉
I love easy and quick decorations, do you?

Tip: the cheese needs to be added 2 min before removing the pizza from the oven, at the very last or it will melt and loose the shape 😉

Cranberry Scones in the oven! I don't know about you but Fall/Winter means "heavy baking season" here 🤣🤣. It might be that the upcoming Holidays have a strong sweet side, it might be the cold weather...reality is that my treats dome on the countertop needs a biweekly refill 😆😆

Today it's time for Cranberry Scones, a family staple (grandma's favorite!!).
What's your family staple sweet recipe?

INGREDIENTS:
2 1/2 cups flour
1/2 cup cane sugar
2 1/2 tsp baking powder
1/2 tsp salt
1/2 cup milk
8 Tbsp butter (1 stick)
1 1/2 cup dried cranberries

PROCEDURE:
In a bowl add all the ingredients starting from the flour + sugar + salt + baking powder + butter in cubes.
Mix with your hands and combine the butter with flour and slowly add the milk. In less than 2 min you will have your dough. Add the cranberries. Take 1 Tbsp of batter and create a ball with your hands. Place it on some parchment paper on a baking sheet. Keep rolling and keep some distance in between the balls. Sprinkle some cane sugar on top. Bake to 400F for 25’.
Store on the countertop. They will last one week/10 days, but I'm sure they will be gone way before that!!

Cauliflower Fish Critters..because even a fish croquette can get spooky at Halloween 🎃 👻🧟‍♂️ 💀🕷☠️🕸

White fish fillets combined with cauliflower and potatoes. Tasty and nutritious. The mix can be shaped in so many ways: balls, sticks, croquettes, patties...or Halloween critters 😉

Ingredients
🎃 1/2 lb. white fish fillet 250gr., steamed 5 min with the cauliflower
🎃 16 oz. potatoes 400gr., boiled
🎃 16 oz. cauliflower 400gr., steamed
🎃 2 eggs
🎃 1/3 cup grated Pecorino cheese 30gr.
🎃 1/2 cup grated Parmesan cheese 40gr.
🎃 nutmeg a pinch
🎃 1 Tbsp minced parsley
🎃 pinch of salt
🎃 1 cup breadcrumbs for coating
For the Halloween decoration:
🕷 2 black olives pitted, sliced in circles
🕷 1 green bell pepper, sliced into strips
Instructions
🎃 In a big bowl mash the potatoes. Add the cauliflower and the fish. Mesh with a fork.
🎃 Add 1 full egg and 1 yolk (reserve 1 egg white for later).
🎃 Add the grated Pecorino cheese, grated Parmesan cheese, parsley, nutmeg, pinch of salt. Mix, cover with some plastic wrap and refrigerate for 30min.
🎃 In a plate whisk the egg white with a fork. Next to it, prepare a dish with the breadcrumbs.
🎃 Remove the fish mix from the refrigerator. Take one tablespoon of mix and shape it like a cylinder with your hands. Coat the fish croquette with the egg white first and with the breadcrumbs later.
🎃 Place the croquette on a baking sheet lined with parchment paper. Place two black olive slices on one short side of the croquette to create the monster eyes. Insert three strips of bell pepper in each long side of the croquette in order to create the legs of the monster.
🎃 Bake in preheated oven at 180C/400F for 20 min.
