You know that a recipe is a trusted no-fail one wh You know that a recipe is a trusted no-fail one when your kids are able to prepare it by themselves (under your supervision) more than once and it always comes out good. 😉
That's our staple family banana bread. A no-fail one!

As for the banana bread:

Ingredients:
1 cup sugar of your choice. I used cane sugar.
1/2 cup butter, room temperature, super soft or coconut oil
2 eggs
3 ripen banana
3 Tbsp milk 
4 Tbsp plain greek yogurt 
2 Cups flour
1 tsp baking powder
1 tsp baking soda
1 tsp salt
Dark chocolate chips, two full handfuls

Procedure:
Mix all the wet ingredients in a bowl, starting from the eggs with sugar and adding all the others on top.
In a separate bowl mix all the dry ingredients.
Slowly combine the dry into the wet mix.
Add the chocolate chips at the end.
Pour in a loaf baking pan and bake in a preheated oven at 350F for 60/70 min. 
Let it cool down and enjoy!!! Have a gorgeous weekend everyone!

Kale. Yuuuk! 🤮 Yes, that's usually my kids' rea Kale. Yuuuk! 🤮 Yes, that's usually my kids' reaction when I take it out from the fridge to prepare a recipe! Don't worry, it doesn't hurt my feelings 😜 

Zucchini and Kale Pesto served as a pasta dressing? 🥳 That gets a totally different reaction. Thumbs up and kid approved. 👍🏻👍🏻

How you serve a food and how you combine it with other ingredients can make a huge difference. A no, no food can magically become a yes! food. And this works with kids but also with adults :-)

In this pesto two are the winning factors:

🏆 The kale has been blanched for 2 minutes to remove some bitterness that is usually on the surface of the leaves. 
🏆 I also added a zucchini to give some sweetness.

Let's make it together!
INGREDIENTS:
2 Tbsp almond meal
1 cup kale, leaves only, no stem
2 Tbsp water
1/4 tsp salt
1/2 medium zucchini, chopped
3 Tbsp grated Parmesan cheese
4 Tbsp olive oil

PROCEDURE:
Place the kale leaves in a boiling water pot for 2 min. Drain and cool down under cold running water. The cold water will stop the cooking.
In a food processor (or tall container if you use an immersion blender) place all the ingredients. Kale + almond meal + water + salt + parmesan + zucchini + oil. Pulse to obtain a smooth cream. Done!
I used the pesto to dress a pasta but you can use it on top of rice, quinoa or to marinade chicken or fish!
