This is a staple at our dinner table. One of the kids’ most favorite recipes.
Baked salmon with dijon honey glaze and veggies. I usually serve it with some rice on the side to complete the meal. It’s a no fail recipe and it’s also very popular for friends and family gatherings. “min effort, max result” recipe 🤣

Prep is only 15 min, the oven does the rest.

Toddler tip: scoop away the glaze or place it on the side once cooked. My little one took some time to appreciate the Dijon grains (exposure, exposure, exposure).

Sauce:
5 Tbsp olive oil
1/2 lemon juice
3 Tbsp Dijon mustard
pinch of salt
3 tsp honey
4 garlic cloves, minced

Mix well and simply pour on top of the salmon. You can use the glaze on top of the veggies too or just season them with olive oil and salt.

Bake in a preheated oven at 400F for 20 min. (Last 5 min in grill mode to obtain a golden glaze)

I received the sweetest and totally unexpected gift from the kids: a bouquet of my favorite flowers. It's not my birthday, it's not mother's day, it's not my anniversary or any other family celebration. They simply said they wanted to say "I love you" and I melted. The kids asked for some cookies the other day, perfect timing to bake some Oat Chocolate Cookies. I’m waiting for the apples to come back at the farmers market to bake the Fall Apple version. Meanwhile, enjoy this chocolaty one!

INGREDIENTS:
1 1/2 Cup all purpose flour
1 tsp baking soda
1 tsp cinnamon or pumpkin pie spices
1/2 tsp sea salt
1 cup butter (2 sticks), melted
1 cup sugar (or maple syrup)
2 large eggs, room temperature
splash of vanilla extract
3 cups rolled oats
2 cups chocolate chips (I like dark chocolate)

Bake to 350F for 12 min. Let cool down for 5 min and enjoy.
Store on the countertop in a basket, no air tight container or they will get chewy.

Enjoy!!

Does it happen to you too to forget to prepare the lunchbox in the evening?? Well, it happened to me this morning. Luckily there are so many combinations that can be put together in less than 5 minutes like this one :-)
I had some garlic naan bread in the fridge, ham, cheese, peach, tomatoes and pistachios. plus a chocolate chip cookie. More than enough! The lunchbox was done while I prepared breakfast.
It doesn’t need to be fancy or complicated. Easy is the best :-)
