Nutritious Yogurt and Almond Pancakes

Nutritious Yogurt and almond pancakes, that’s what we need to start the weekend in the best way! When the kids smell pancakes in the air they know that is a special day (either weekend or holiday) and they surely wake up with a big smile! I usually prepare from scratch the traditional pancake mix, but today I wanted an extra fluffy touch so I decided to add thick rich Greek yogurt to the mix and some almond flour (that is simply raw almonds blended up until a “flour” consistency is reached!). The final result was insanely good! so fluffy, so light!!

If you have a picky eater in the house, this recipe will be a nice way to offer her a complete breakfast loaded with proteins that will fill her with a lot of energy.

The addition of almond flour gives a nice delicate earthy background taste to the pancakes and it’s also a good “brain food” for the kids 😉

If your kids are allergic to nuts you can always skip the almond flour in the recipe. The pancakes will still taste great!!

We played a bit with the shapes and added some fresh fruit to have more fun 🙂 definitely a memorable breakfast!

As San Valentine is coming we had fun heart shaping the pancakes. It’s very simple. Fill a small ladle with the pancake mix and than pour it in the frying pan designing an heart. Start from the outside and than fill the center. That’s it! it’s so simple, yes.

Yogurt and Almond Pancakes
Ingredients
  • 1 Cup all purpose flour 130gr.
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 2 Tablespoons coconut oil or vegetable oil
  • 2 Tablespoons coconut sugar or cane sugar or brown sugar
  • 3/4 Cup Greek Plain Yogurt 300gr.
  • 6 Tablespoons milk any kind you like
  • 1 egg
  • 2 Tablespoons almond flour
  • 1 Cup berries for decoration
Instructions
  1. In a medium bowl mix all the wet ingredients: yogurt, egg, coconut oil, milk.
  2. Whisk well and set apart
  3. In another bowl mix all the dry ingredients: flour, sugar, almonds, baking soda and baking powder. Mix.
  4. Slowly add the dry mix to the wet one whisking continuously in order to create a smooth mix.
  5. Turn the heat on at medium-low. Pour a small ladle of pancake mix in the center of a small frying pan.
  6. With a circular movement of your hand move the pan in order to give the pancake a nice circular shape.
  7. Let the pancake cook for 1/2 minutes. When you will see small bubbles forming on the surface, flip the pancake on the other side and let it cook for another minute.
  8. Serve with fresh fruit, maple syrup or homemade marmalade or jam. Enjoy!
