Vegan chocolate mousse with cookies – Halloween
Ingredients
  • 1 Cup water 270 ml
  • 13 oz. dark chocolate 70% cocoa 350 gr
  • 1 Cup cocoa cookies or any chocolate cookies you like
  • 18 Plasmon cookies or any long oval "gravestone" shape cookies you like
Instructions
  1. With a sharp knife break the chocolate bar in pieces. They do not need to be too small
  2. Place the water in a saucepan and bring to boil.
  3. Meanwhile prepare a big bowl (big enough to contain the saucepan) half filled with ice.
  4. When the water is boiling, turn the heat off and add the chocolate.
  5. Whisk up until melted.
  6. Place the saucepan on top of the ice
  7. Using and electric whisk start whisking the chocolate mix. I deeply suggest to use the whisk at low speed at the beginning and when the mix will start getting thicker you can increase speed, otherwise the chocolate will squirt out messing your kitchen ;-)
  8. Within 5 minutes the chocolate mix will get thicker and fluffy forming a delicious mousse.
  9. The mousse will look like whipped cream, fluffy and light.
  10. Place 2 teaspoons of chocolate mousse in a small glass. The chocolate mousse is very intense, I think 2 teaspoons are enough to enjoy the dessert without overdoing.
  11. Delicately tap the glass on the counter to level the surface of the mousse.
  12. Melt few chocolate chips in the microwave and place the cream in a small plastic bag that you will use as a pastry bag. Cut a corner of the plastic bag. A small hole, not big.
  13. Take the Plasmon cookies, flat side up.
  14. Using the plastic bag as pastry bag write R.I.P. on each cookie to create a yummy gravestone. Let them dry out. It will take 5 minutes.
  15. Meanwhile place the cocoa cookies in a plastic bag. Close it, not completely and with a chicken hammer break them in crumbles.
  16. Add few teaspoons of crumbled cocoa cookies on top of the chocolate mousse. It's the graveyard ground.
  17. Break the bottom part of a Plasmon cookie (mine were too long for the glass!) and insert it in the mousse. Two Plasmon cookies should be enough for each glass.
  18. Keep the chocolate mousse graveyard glasses in the refrigerator and serve cold.
