In a bowl mash the beet and the banana with a fork. Add the flour and the egg. Mix well. For a smoother texture use a food processor.
Heat 1 tsp coconut oil in a skillet and pour half a tablespoon of mix into a round shape.
Cook around 1 min, flip on the other side and cook for 40 more seconds. Remove from the pan, stack the pancakes one on top of the other and keep cooking the pancakes to finish all the batter.
