Strawberry Ricotta Cake +12M
  • 2 cups all purpose flour (250gr.)
  • 1 cup ricotta cheese (250gr. or 10oz.)
  • 1/3 cup cane sugar (80gr.)
  • 11 oz fresh strawberries (a dozen)
  • 1 orange, zest only
  • 2 medium eggs
  • 7 Tbsp coconut oil (80ml)
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  1. Preheat the oven to 400F.

  2. In a large bowl whisk the eggs with the sugar for 1 minute to create a pale yellow mix.

  3. Add ricotta and coconut oil. Mix.

  4. In a separate bowl combine flour with baking soda, bakign powder and salt. Mix.

  5. Slowly add the dry mix into the wet one.

  6. Add the strawberries and the orange zest. Combine.

  7. Transfer the batter in a cake pan. Level the surface with a spoon.

  8. Bake in preheated oven to 400F for 30min. Let it cool down for 10min out of the oven.

  9. Dust the surface with some powdered coconut flakes or coconut flakes.
