Pumpkin Coconut Rice Pudding +6M

Vegan, Gluten Free

Ingredients
  • 1/4 cup brown rice
  • 1 1/2 cup coconut milk
  • 3 Tbsp pumpkin puree
  • 1 Tbsp vanilla extract
  • 1 tsp lemon zest
  • 1/4 tsp cinnamon
  • 1/2 small ripen banana
Instructions
  1. Soak the rice in water overnight.

  2. Rinse the rice under runnign water.

  3. Place the rice + coconut milk + vanilla in a sauce pan and bring to boil. Reduce to simmer, cover with a lid and cook for 40min.

  4. Transfer the sticky rice in a bowl, add the pumpkin puree, mashed banana, cinnamon, lemon zest.

  5. Mix and serve warm.
