Fruit Sweet Bread Cups with Yogurt
Servings: 12 cups
Ingredients
  • 12 slices multigrain whole grain sandwich bread
  • 1 mango, cut in small cubes
  • 3 tangerines, peeled and with the white lining removed. Every slice cut in half if serving to toddlers.
  • 1/2 cup raspberries
  • 1/2 cup blueberries. Cut in half if serving to toddlers.
  • 2 medium kiwi. Ripen, check the flavor, you do not want the kiwi to be too acidic. Cut in small cubes
  • 6 Tbsp greek plain yogurt
  • 2 Tbsp coconut oil
  • 3 Tbsp maple syrup
  • 3 Tbsp local honey to drizzle on top (maple syrup for babies under 12 months)
Instructions
  1. Preheat the oven to 400F/180C.

  2. In a small cup combine the coconut oil with the maple syrup.

  3. With a rolling pin flatten each slice of bread. Slice out the edges. 

  4. Brush the slices of bread back and front with the maple syrup/coconut oil combo.

  5. Fill each hole of a muffin tin with one slice of bread. 

  6. Using your fingers press the sides well to create a cup.

  7. Bake in preheated oven to 400F for 10 min.

  8. Prepare the fruit of your choice. I chose mango, tangerines, raspberries,blueberries, kiwi. Pick up different bright colors for a prettier result.

  9. Chop the fruit in kids bite size pieces (cut the grapes in half and even the blueberries if you are serving the cups to a toddler).

  10. When the cups are ready and cooled down fill them with the fruit.

  11. Top each cup with one teaspoon of yogurt, a drizzle of honey and a mint leaf.

  12. For a more fun party you can place the cups on a tray and create a fruit bar with cups filled with different fruit, the yogurt and the honey. The kids can take their own cup and fill it as they like!!
