Zucchini Vanilla Birthday Cake
Ingredients
CAKE
  • 2 cups all purpose flour
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 3/4 tsp salt
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1 Tbsp vanilla extract
  • 3/4 cup coconut sugar or maple syrup
  • 1 very ripe banana
  • 1/2 cup coconut oil
  • 2 Tbsp unsweetened applesauce
  • 2 large eggs
  • 1/3 cup greek yogurt
  • 2 cup grated zucchini (about 1 large)
DECORATION
  • 1 cup blueberries
  • 2 Tbsp coconut flakes
Instructions
  1. Preheat oven to 350F/175F

  2. Combine all the dry ingredients in a bowl: flour, baking powder, baking soda, salt, cinnamon, nutmeg and mix.

  3. In a separate bowl whisk together the eggs and sugar up until the eggs color will be pale yellow.

  4. Mix in applesauce, coconut oil, vanilla, and yogurt.

  5. Slowly add the dry mix, just until combined. 

  6. Stir in grated zucchini and mashed banana.

  7. Pour into small cake pan, 6 inches diameter and bake for 60 minutes or until a toothpick inserted into center comes out clean.

  8. Allow to cool completely before decorating.

  9. Simply add some blueberries and coconut flakes on top. You can also add some stick paper decorations.
