In a large pot add 2 Tbsp olive oil, the minced carrots, celery, garlic and onion.
Sautee’ 3 minutes at medium heat.
Rinse the lentils under running water.
Add the lentils + fresh tomatoes chopped in pieces + tomato sauce + broccoli florets chopped + broth + thyme + cumin and salt (optional) into the pot.
Bring to boil, reduce to simmer, cover and cook for 15minutes.
Add the apple cider vinegar, stir and switch the heat off.
Serve warm or for a smoother consistency use and immersion blender to get a smooth puree.
