Baked Oatmeal Cups with Fruit +9M Vegan and GF
Ingredients
FOR THE CUPS
  • 1 cup rolled oats
  • 1 banana, ripe
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1/2 Tbsp coconut oil
FILLING OPTIONS per Cup
  • 1/2 tsp almond butter
  • 1/2 tsp chocolate spread
  • 3 chocolate chips
  • 2 tsp plain greek yogurt
  • 1 strawberry diced in tiny pieces
  • 3 blueberries cut it in pieces if serving to babies
  • 1 tbsp apple sauce
  • 1 tbsp banana pieces
Instructions
  1. Preheart the oven to 350F.

  2. Place the oats in a food processor and pulse few seconds to obtain a breadcrumb consistency.

  3. Transfer the oat flour in a bowl and add the banana, vanilla, cinnamon, coconut oil. 

  4. Combine the ingredients well with a fork to obtain a compact sticky dough.

  5. Grease your hands with some coconut oil.

  6. Fill the holes of a muffin tin with 1 Tablespoon of dough. Spread on the sides and compact the mix with your fingers or a tablespoon creating a cup. 

  7. Bake in preheated oven to 350F for 12min. Let the cups cool down completely before filling them.

  8. Place a teaspoon of the creamy filling you decided to use (yogurt, almond butter, applesauce, chocolate spread) and top with the chunky texture second filling on top (fresh fruit, banana, chocolate chiops, shaved almonds..)
