Tofu Zucchini Sweet Peas Millet Fritters
Ingredients
  • 2 oz sprouted organic firm tofu (1/4 cup)
  • 1 Tbsp rice flour
  • 1/4 cup cooked millet
  • 1 medium zucchini
  • 1/2 cup frozen sweet peas
  • 1/4 cup chopped scallions
  • 2 Tbsp olive oil
  • pinch salt (not for babies under 12 months)
Instructions
  1. Place the tofu + flour in a food processor. Blend few seconds until smooth.

  2. Add cooked millet. pulse until smooth.

  3. Add peas, zucchini, scallion, salt (for older kids). pulse until combined.

  4. In a skillet heat 2 tbsp olive oil over medium heat. Add one tablespoon of tofu mix for each fritter (they are super soft, don’t worry, they will firm up like pancakes once cooked!!). 

  5. Shake the pan to give a circular shape and flatten the fritters so that they will cook evenly. cook 4 minutes until golden brown.

  6. Flip and cook on the other side for another 3/4 minutes.
