Sweet Potato Fries with Avocado Aioli
Ingredients
BAKED FRIES:
  • 4 sweet potatoes
  • 2 Tbsp olive oil extra virgin
  • 1 tsp sweet paprika
  • 1 Tbsp apple cider vinegar
AVOCADO AIOLI DIP:
  • 1 large avocado
  • 1/3 cup vegan mayo
  • 3 cloves roasted garlic
  • 1/2 lemon juice
  • pinch salt
Instructions
BAKED FRIES:
  1. Preheat the oven to 400F/180C. Peel the potatoes and slice them in sticks, fries size

  2. Place the potato sticks in a bowl and add the olive oil, vinegar, paprika, and pinch of salt. Skip the salt if you are serving the baked fries to a baby under 12 months. Toss well.

  3. Spread out the fries in a single layer onto a baking sheet lined with parchment paper.

  4. Bake for 30 min or until golden brown, flip few times for a crispy result on all sides.

AVOCADO AIOLI DIP:
  1. Combine in a bowl all the ingredients: avocado, roasted garlic, mayo, lemon juice, pinch of salt. Mix well. To obtain a very smooth consistency you can use a food processor.
