It can be filled, like any pizza, with anything that you like. Today I decided to choose a kids\u2019 friendly mediterranean summery option. Small calzoni with fresh pesto, cherry tomatoes, provolone cheese and sweet black olives filling. A nice, healthy and tasty filling for a crusty but still soft pizza dough.<\/p>\n<p>The recipe is a good idea for a lunch box or just for a family lunch. For a super easy pizza dough recipe, click here <a title=\"The perfect Pizza Dough\" href=\"https:\/\/www.buonapappa.net\/the-perfect-pizza-dough\/\" target=\"_blank\">&#8220;homemade pizza dough&#8221;<\/a><\/p>\n<p><a href=\"https:\/\/www.buonapappa.net\/wp-content\/uploads\/2014\/08\/calzone4.jpg\"><img decoding=\"async\" class=\"alignnone size-medium wp-image-2456\" src=\"https:\/\/www.buonapappa.net\/wp-content\/uploads\/2014\/08\/calzone4-300x168.jpg\" alt=\"calzone4\" width=\"300\" height=\"168\" \/><\/a><\/p>\n<p>&nbsp;<\/p>\n<p>&#8211; dust a flat surface with some semolina flour. with a rolling pin roll each dough slice to make it very flat, less than 1\/4 inch and try to keep the triangular shape of the slice as much as possible.<\/p>\n<p><a href=\"https:\/\/www.buonapappa.net\/wp-content\/uploads\/2014\/08\/calzone5.jpg\"><img decoding=\"async\" class=\"alignnone size-medium wp-image-2457\" src=\"https:\/\/www.buonapappa.net\/wp-content\/uploads\/2014\/08\/calzone5-300x168.jpg\" alt=\"calzone5\" width=\"300\" height=\"168\" \/><\/a><\/p>\n<p>&nbsp;<\/p>\n<p>&#8211; spread one teaspoon of basil pesto in\u00a0the center of the dough. Remember to keep a 1\/2 inch border without filling. You can buy the pesto at the store or, even better, try this recipe <a title=\"Homemade Basil pesto\" href=\"https:\/\/www.buonapappa.net\/homemade-basil-pesto\/\" target=\"_blank\">&#8220;homemade basil pesto&#8221;<\/a><\/p>\n<p><a href=\"https:\/\/www.buonapappa.net\/wp-content\/uploads\/2014\/08\/calzone6.jpg\"><img decoding=\"async\" class=\"alignnone size-medium wp-image-2458\" src=\"https:\/\/www.buonapappa.net\/wp-content\/uploads\/2014\/08\/calzone6-300x168.jpg\" alt=\"calzone6\" width=\"300\" height=\"168\" \/><\/a><\/p>\n<p>&nbsp;<\/p>\n<p>&#8211; add 2 cherry tomatoes, sliced. Try one cherry tomato first: the sweeter, the better. If they are too acidic, you might want to substitute them with 1 teaspoon of tomato paste.<\/p>\n<p><a href=\"https:\/\/www.buonapappa.net\/wp-content\/uploads\/2014\/08\/calzone7.jpg\"><img decoding=\"async\" class=\"alignnone size-medium wp-image-2459\" src=\"https:\/\/www.buonapappa.net\/wp-content\/uploads\/2014\/08\/calzone7-300x168.jpg\" alt=\"calzone7\" width=\"300\" height=\"168\" \/><\/a><\/p>\n<p>&nbsp;<\/p>\n<p>&#8211; add 4 cubes of provolone cheese. I like provolone because it has a very light smoked flavor and melts perfectly without releasing too much liquid. You can also use fontina cheese or gouda.<\/p>\n<p><a href=\"https:\/\/www.buonapappa.net\/wp-content\/uploads\/2014\/08\/calzone8.jpg\"><img decoding=\"async\" class=\"alignnone size-medium wp-image-2460\" src=\"https:\/\/www.buonapappa.net\/wp-content\/uploads\/2014\/08\/calzone8-300x168.jpg\" alt=\"calzone8\" width=\"300\" height=\"168\" \/><\/a><\/p>\n<p>&nbsp;<\/p>\n<p>&#8211; add few black sweet olives. The oil will act like a glue once you will roll the dough.<\/p>\n<p><a href=\"https:\/\/www.buonapappa.net\/wp-content\/uploads\/2014\/08\/calzone10.jpg\"><img decoding=\"async\" class=\"alignnone size-medium wp-image-2462\" src=\"https:\/\/www.buonapappa.net\/wp-content\/uploads\/2014\/08\/calzone10-300x168.jpg\" alt=\"calzone10\" width=\"300\" height=\"168\" \/><\/a><\/p>\n<p>&nbsp;<\/p>\n<p>&#8211; roll the dough starting from the larger part<\/p>\n<p><a href=\"https:\/\/www.buonapappa.net\/wp-content\/uploads\/2014\/08\/calzone11.jpg\"><img decoding=\"async\" class=\"alignnone size-medium wp-image-2463\" src=\"https:\/\/www.buonapappa.net\/wp-content\/uploads\/2014\/08\/calzone11-300x168.jpg\" alt=\"calzone11\" width=\"300\" height=\"168\" \/><\/a><\/p>\n<p>&nbsp;<\/p>\n<p>&#8211; with your hands make sure that the borders are &#8220;sealed&#8221;. You do not want any good filling to get out during the baking process. Always with your hands give the calzone a C shape, like a croissant.<\/p>\n<p><a href=\"https:\/\/www.buonapappa.net\/wp-content\/uploads\/2014\/08\/calzone12.jpg\"><img decoding=\"async\" class=\"alignnone size-medium wp-image-2464\" src=\"https:\/\/www.buonapappa.net\/wp-content\/uploads\/2014\/08\/calzone12-300x168.jpg\" alt=\"calzone12\" width=\"300\" height=\"168\" \/><\/a><\/p>\n<p>&nbsp;<\/p>\n<p>&#8211; place the calzoni on a parchment paper on a baking sheet and brush the surface with some Extra Virgin oil of olive<\/p>\n<p><a href=\"https:\/\/www.buonapappa.net\/wp-content\/uploads\/2014\/08\/calzone13.jpg\"><img decoding=\"async\" class=\"alignnone size-medium wp-image-2465\" src=\"https:\/\/www.buonapappa.net\/wp-content\/uploads\/2014\/08\/calzone13-300x168.jpg\" alt=\"calzone13\" width=\"300\" height=\"168\" \/><\/a><\/p>\n<p>&nbsp;<\/p>\n<p>&#8211; bake the calzoni in a preheated oven at 400 F. for 15 minutes, than broil them for an extra 2 minutes.
