I’ll be using mango as it’s the dead of winter here in Vermont and there’s nothing in-season is available =(. I’m also going to make it using 1/2 rice flour and 1/2 wheat flour. Hi Jennifer! Good question. Coconut flour will give you a more dense result, it also requires more liquid as it absorbs it a lot. I would try with 1 cup coconut flour and 1/2 cup coconut or almond milk. Let me know how it goes!! B
