Pasta sotto l’ombrellone

A volte mi piace soprendere i miei piccoli con sapori decisi e forti, di carattere. E’ il caso della ricetta di oggi: sani ingredienti mediterranei dal gusto inconfondibile come olive, capperi e ricotta salata di pecora. Il tutto in quantita’ tali da non sconvolgere troppo il palato dei nostri bambini, solo incuriosirlo.

Ecco gli ingredienti per 4/6 persone:

Come in molte ricette Mediterranee, essenziale e’ la qualita’ dei pochi ingredienti primi. I pomodori: da sugo, dolci e con tanta polpa. Le olive nere: anch’esse dolci. Io ho scelto delle olive taggiasche sott’olio (le mie preferite). I capperi: sotto aceto. Quelli sotto sale sono troppo saporiti. La ricotta salata di pecora: fresca e bella compatta da grattuggiare.

Vista l’intensita’ del sugo finale e’ possibile anche usare della pasta integrale, buona!

Personalmente preferisco questa pasta servita calda, ma raccomando anche la versione fredda che si puo’ preparare con anticipo la sera prima. Come in tutte le paste fredde ricordatevi solo di scolare la pasta qualche minuto prima della fine della cottura.

      Hi! Here you are the recipe in English
      Ingredients:
      500 gr. ripe tomatoes
      200 gr. tomato sauce
      2 spring onions
      100 gr. black olives
      2 Tbsp capers
      1 clove garlic
      100 gr. baked goat ricotta (pecorino cheese will be fine too)
      Extra virgin oil of olive, basil
      400 gr. fusilli pasta (any kind of short pasta will work)

      Procedure:
      – Put the tomatoes in some boiling water for 1 minute so that it will be easier to remove the skin. Remove the seeds.
      – Place a big pot 3/4 full of water to boil.
      – Add 2 Tbsp of olive oil and the garlic in a medium size frying pan. Turn the heat on at medium. After 1 minute add the minced spring onions. Three minutes later add the diced fresh tomatoes and stir.
      – Add the olives (you can chop them in small pieces) and the capers. Adjust with salt. Add the tomato sauce. Stir and let it cook for 6 minutes.
      – Add 4/5 leaves of fresh basil
      – When the water in the big pot is boiling add 1 Tbsp of sea salt and the pasta. Follow the cooking directions of the pasta.
      – Drain the pasta and place it in a big bowl
      – Add the sauce, stir and ENJOY!!!
