Fava Bean & Kale Baby Food Puree +8M

Fava beans (also known as Broad Beans) are very popular in Italy, they are usually in season in spring. Sweeter and tender than regular sweet peas they are a lovely snack even raw. To be sincere it takes a bit of time to clean them as you have to shell them from the pod and than peel out the outer skin. It’s not difficult at all, it just takes few minutes…but it’s totally worth considering the amazing nutritional properties 🙂

Fava beans are packed with iron, fiber and protein = they are a lovely complete vegetarian meal for your little one!!

They have an high concentration of thiamin, vitamin K, vitamin B-6, potassium, copper, selenium, zinc and magnesium and folate, not bad at all 😉

Also, shelling and peeling is a fun activity to do with the kids!!

Today I decided to prepare a baby puree adding also:

  • Kale (to add even more nutritional valute to the meal!!)
  • Pecorino cheese and ricotta to balance the flavors and give an overall creamy texture
  • Mint, just few fresh leaves that will give an extra lovely freshness to the recipe

The recipe is very versatile: can be served as a baby puree, starting from +8M or used as a pasta dressing for your toddler, for a baby led weaning meal or for the rest of the family!

I would suggest offering this puree to your baby starting from around 8 months simply because legumes might cause gas in a very young tummy.

This baby puree can be stored in the refrigerator for up to 3 days or freeze it for up to 3/4 months.

Fava Bean & Kale Baby Food Puree +8M
Ingredients
  • 1 cup fava beans
  • 2 kale leaves
  • 2 Tbsp ricotta
  • 1 small carrot
  • 1 Tbsp pecorino cheese
  • few fresh mint leaves
Instructions
  1. Prepare the vegetables: remove the fava beans from the shell and remove the inner skin too.
  2. Remove the tender kale leaves from the stem
  3. Peel the carrot and chop it in small pieces
  4. Steam the vegetables for 8 minutes
  5. Place the steamed vegetables in a tall container or in a food processor or in a food blender and add the other ingredients: the ricotta, Pecorino cheese, mint leaves
  6. Blend up until smooth and creamy
  7. Serve the puree to your baby warm
  8. or use it as a pasta dressing for your toddler, older kids and the rest of the family

    Thank you for your recipe for chickpeas crackers. It was easy and delicious. They are in the freezer for when my Grandkids visit. My husband and I are also enjoying them.
