Baked Chicken Vegetable Samosa

Samosa, empanada, calzone…so many international ways to define a small pocket made of pastry and filled with yummy ingredients. Every country has its own recipe and variations: the pastry can be phyllo, puff pastry, pizza dough or a combo of the mentioned ones and the filling can really be anything from vegetables only, meat only, fish or a combo.

Today I would like to share with you a kid friendly and super tasty samosa recipe using phyllo pastry and a filling of chicken and mixed vegetables. I’m baking my samosa, I’m not deep frying them. Thanks to the phyllo pastry the result will still be crispy but with no frying involved (way lighter and healthier). 

Summer is almost here and the chicken veggie samosa are a lovely party idea (birthday party or any party!!). They can be prepared ahead and they are a lovely finger food easily handled by little ones too.

Another bonus: you can add as many vegetables as you like. It’s a fun way to offer vegetables to toddlers without a lot of fuss.

The samosa are also a great idea for lunch boxes and on-the-go lunches.

This is not a 20 minutes recipe, it’s fair to be said. The whole recipe requires a good hour to be prepared and it’s divided in two phases: preparing the filling and assembling the samosa.

Still, it’s not difficult at all!! 

Let’s start together. We are going to prep our filling starting from the vegetables. I peeled the potatoes and chopped them in cubes. Peeled the carrots and finely grated them. Chopped the onion in small pieces and diced the garlic cloves.

Preheat the oven to 400F/200C. Line a baking tray with some parchment paper. 

In a large pan heat the extra virgin olive oil at medium heat.  Add the onion and garlic. Saute’ 3 minutes until golden, stirring often. 

Add the spices (coriander, cumin, paprika, oregano) and the ginger. Stir well to combine the flavors and cook for a minute. Add the ground chicken, diced potatoes, carrots and 4 tbsp of water. Stir week again. Adjust with salt. If cooking for a baby under 12 months, skip the salt (you can always add it at the end for the adults). Reduce the heat to low, cover and simmer for 10min. Add a little more water halfway if needed. 

Add the frozen peas and cook for a minute or two. Turn the heat off, let it cool down completely. Phase 1 is done, now it’s time to assemble the samosa 🙂

Unroll the phyllo pastry and take one foil. Roll it again and cover the rest with a dump towel to prevent the remaining foils to dry out.

Place the rectangular shaped foil in front of you on a flat surface. Brush with extra virgin olive oil. The oil will work as a glue for our samosa.

Fold the top of the foil to make it square.

Brush again the top part that didn’t have any oil. Fold up the lower right corner to create a triangle. Brush the dry surface.

Fold the top right corner into the center. And the lower corner on top of it.

Fold the pointy corners into the pocket that just formed. You now have a cone that you can fill with 2/3 Tbsp of the chicken veggie mix.

Close the pocket and brush again to seal everything. Place the samosa on the parchment paper.

Bake 15/20 minutes up until golden brown.

If you are preparing the samosa for a party my suggestion is to prepare them up before the baking part. Store them in the refrigerator covered with a damp towel or freeze them in an freezer safe container. When it’s time to party bake them in the oven. That’s how they will keep crispy 🙂

After the party, if you have any leftover you can store them in an air tight container in the refrigerator for up to 2 days. You can freeze the leftovers but to be sincere once thawed they will not be crispy anymore.

Ingredients
  • 1 Tbsp extra virgin olive oil

  • 1/2 tsp sweet paprika
  • 1 tsp oregano
  • 1/2 lb. ground chicken

  • 2 small carrots, peeled and grated
  • 4 Tbsp water
  • 1/2 cup frozen peas
  • pinch salt
  • 8 sheets phyllo pastry, rectangular
  • 1/4 cup olive oil to brush
Instructions
  1. Peel the potatoes and chop them in cubes.

  2. Peel the carrots and finely grate them.

  3. Chop the onion in small pieces

  4. Dice the garlic cloves.
