A warm oatmeal breakfast is such a nutritious and comforting way to start the day for both your baby and yourself!!

Why not adding to the basic oatmeal some apples and carrots for a more nutritious and tasty result?

Oats are a gluten-free whole grain and a great source of important vitamins, minerals, fiber, antioxidants…and iron!! A lovely choice for baby food.

Carrots are loaded with Vitamin A that helps the baby’s sight and white blood cells production, that also means a stronger immune system.

Apples are not only super easy to digest but a lovely source of fiber and Vitamin C.

Pending your baby’s age you can easily puree’ the oatmeal with an immersion blender to obtain a smooth consistency. This recipe can be offered to your baby starting from 6 months of age.

The carrot apple oatmeal can be stored in the refrigerator for 3 days.

Also, if you really do not have time in the morning you can easily prepare the oatmeal the night before, refrigerate it and reheat it in the morning.

The procedure is very simple:

Peel the carrot (if it’s organic, you can even leave the peel). Grate the carrot and the apple (I left the peel of the apple as we are going to cook it).

Heat the milk and add all the ingredients. Cook for 10 min up until nice and tender, stir once in a while, more toward the end.

Carrot Apple Porridge +6Months
Ingredients
  • 1 cup coconut milk
  • 1/2 cup rolled oats
  • 1 Fuji apple, grated
  • 1 carrot, grated
  • 1 tsp vanilla
  • 1 pinch nutmeg
  • 1/2 cup mixed berries for topping
Instructions
  1. Grate the carrot and the apple (leave the core)

  2. In a saucepan heat the milk of your choice

  3. Add the other ingredients: apple + carrot + oats + vanilla + nutmeg. Stir

  4. Cook at low heat for 10 min. Stir occasionally, more frequently toward the end.

  5. Top with fresh berries. Enjoy warm!

    Hi Barbara,
    I have a question for you …
    Would I purée after cooking the porridge or before?
    I have a Vitamix and a Food Processor, which do you think would purée the best?

      Hi Natalie! Very good question. Considering that you are not using an immersion blender I would puree before cooking as it will be less messy to clean 🙂 You might also need less cooking time. Thank you so much for following BuonaPappa!! ciao, b

      Also, I think that the Food Processor will be enough. As you will cook the ingredients they will be very tender at the end. If raw, the Vitamix (more powerful) would have been better. Ciao! b

    Hi Barbara, may I ask if I could substitute the coconut milk with powdered baby formula instead? I have a large can of leftover formula that I have no idea what to do with grazie mille!

      Hi Wei-Yann! Yes, it’s a lovely substitution! Combine the baby formula with water following the directions and substitute the same quantity of coconut milk for the recipe. Enjoy!! Ciao, b
