Banana quinoa pudding

This is a good recipe for our little ones and a new breakfast idea for the rest of the family.

Quinoa..so many good properties! Tecnically it’s not a cereal, it’s a seed, but it can be used in cooking as a cereal. Why I like it and I suggest it for babies and kids? Has a very delicate taste, it is an amazing source of protein, iron, potassium and other vitamins and minerals and, most of all, is easy to digest (perfect for our little ones!!)

Also, let’s talk about the texture: unique. The seeds themselves are smooth and creamy, the tail a crunchy texture even after cooking. Just remember to rinse the quinoa seeds before cooking them. That’s the way to clean out an invisible layer on their surface that might give a bitter taste if not removed.

Today I prepared quinoa with bananas using coconut milk: a creamy result with a delicate sweet taste. The bananas should be ripe, as they are sweeter and easier to digest.

Enjoy the pudding, it’s creamy and sweet!!

    Hello,

I just discovered your website yesterday and it’s great!
The only problem is that I live in France and I don’t understand american units.
One cup means nothing to me. I tried to convert into metric using an internet website but I think my proportions are all wrong. I have much too much quinoa compared to banana.
Do you think you could give me the quantities for this recipe in metric?

Thanks very much for your help,

    Johanna

      Hi Johanna!
      thank you so much!
coming from Europe it has been difficult for me too to switch to the american unusual measure system 🙂
the metric one is sooo easier. or maybe it’s just because we grew up with the metric one!
Regarding the quinoa banana pudding, here you are the conversions:
      1 cup quinoa = 230 gr.
2 cups coconut milk = 480 ml. (half a liter is fine too)
2 long bananas. if they are small, you can use 3
2 tablespoons of Agave. here I do not convert in grams, it’s easier to use a regular tablespoon.
      2 teaspoon of vanilla extract
      1 teaspoon of cinnamon

Let me know if you need any more information, and if your baby likes the pudding!!
      ciao,
      barbara
