French Toast. Such an easy breakfast to prepare for your little one and for the whole family. It’s a quick and nutritious cousin of the pancakes, but it takes way less time to prepare.

Today I would like to share with you a baby version, enriched with banana some spices and hemp seeds.

I’m not using any kind of added sugar in the recipe (the maple syrup on top is totally optional) but I’m adding banana instead to give a delicate sweet flavor and also extra creaminess to the texture. If you want the recipe to be sweeter just choose banana with a lot of brown dots. The more ripe the banana, the sweeter will be.

Hemp seeds also complete the recipe. They offer a lovely amount of Omega 3 and Omega 6 fatty acids, so much needed for your baby’s proper brain development.

I also added some spices, a pumpkin pie blend of cinnamon, ginger, nutmeg, cloves and lemon. You can also add cinnamon and nutmeg only.

PROCEDURE

In a bowl mash the banana with a fork. Add the egg and mix. Add the hemp seeds and spices, mix.

Slice the bread in small squares or sticks. They are both great sizes for little ones and toddlers. Babies can grab the squares or hold the sticks and chew the top. Toddlers can eat them like finger food.

Add the bread pieces in the bowl and coat them all over with the egg/banana mix.

Grease a skillet with a teaspoon of coconut oil. Add the sticks one next to the other and cook at medium/low heat 2 minutes per side. Flip once.

Serve warm with a drizzle of maple syrup or honey for babies over 12 months and fresh fruit.

CAN I FREEZE THE FRENCH TOAST?

Yep, for up to two months. French toast freezes well and luckily does not change in taste or quality once frozen. I would suggest to freeze the pieces/slices divided by a foil of parchment paper so that they will not stick together and you will be able to thaw only some pieces if you need to. Place the French toast in an air tight freezer container or freezer plastic bag.

HOW TO STORE THE FRENCH TOAST?

You can refrigerate any leftover within two hours from cooking. Simply place the French toast in an air tight container in the fridge. If you have more than one layer, place some parchment paper to divide the pieces and prevent them from getting soggy. You can reheat them in the toaster for 2-3 minutes or in the oven to 400F for 4 minutes per side, but it will take longer.

WHICH KIND OF BREAD TO USE?

I used multigrain wholewheat toast bread to prepare my French toast but you can use regular white toast bread, gluten free toast bread or whole seeds bread. For little ones just make sure that there are not big seeds in the bread.

For a fluffier and buttery result you can indulge yourself and use brioche bread or challah bread.

Ingredients
  • 1 large egg
  • 2 slices whole grain bread
  • 1 medium ripe banana
  • 1/4 tsp pumpkin pie spices
  • 2 tsp hemp seeds
Instructions
  1. In a bowl mash the banana with a fork.

  2. Add the egg, hemp seeds and spices and mix.

  3. Slice the bread slices in 1 inch cubes or 1 inch lenght sticks.

  4. Add the bread into the banana/egg mix and coat it all over.

  5. Grease a skillet with a teaspoon of coconut oil, add the bread pieces one next to the other leaving some space in between. Cook at medium/low heat for 2 minutes per side. Flip once.

  6. Serve the french toast warm with a drizzle of maple syrup (or honey for babies over 12 months) and fresh fruit.

    I just made these Barbara. They came out wonderful! Can I freeze them?

      I’m so glad to hear that! The French toast is such a yummy recipe. Yes, you can freeze them for up to 3 months. I would suggest to keep them separated using some parchment paper.
