Baby pancakes

Pancakes. For our family (and I think we are not the only one!) pancakes are a Sunday morning tradition. My husband is not working on Sunday and he’s the pancakes chef (he’s terribly good at making them). Our little Luca loves them and he prepares them with daddy and that makes pancakes even more fun 🙂

My husband taught me how to cook pancakes, the “bubble” trick when to flip them and the “double pan” trick too. Today I will share with you my pancakes experience and a special recipe: pancakes for babies under 12 months.

The perfect pancake is fluffy and airy, lightly sweet but not too much. After trying different mixes, adding this ingredient and reducing this other one…and after testing different solutions, we ended up with a recipe that we are confident sharing with you. It’s perfect for babies under 12 months (no eggs, no sugar, no milk) and it’s perfect for the rest of the family too. The final result is fluffy and airy, lightly sweet but not too much…a win win situation!

Considering the ingredients the recipe can also be categorized as vegan!!

A perfect match for pancakes is maple syrup (the real one!). But for babies what about a nice homemade apple sauce? We decided to prepare that too!!

    Hi Ms Barbara,

    Can I use rice flour to do the pancakes

      Hi Chitra! yes, you can substitute the 2 cups all purpose flour with 2 cups rice flour and 1/2 cup tapioca flour. You might need a bit more coconut milk, as the rice flour tends to absorb liquids more than regular flour. Let me know if you like the pancakes! ciao, b

    thank you for the best pancake recipe, i want to ask you for finger foods recipe for baby under 12 months if you refer me in your blog … i tried to find something but its all for toddlers.

      Thank you for watching BuonaPappa! I’m so glad you like my recipes 🙂
      If you go in the “allergy free” section you will find some recipes without eggs or cow milk that you can try: Lentil cakes, polenta pizza (you can cut the polenta in tiny strips, easier for a baby to hold).
      In the “toddler” section there are some recipes that can be adjusted for babies under 12 months. The Vegetable Meatloaf is great (cut one slice in tiny tiny pieces). If you baby hasn’t been introduced to eggs yet, you can easily skip the eggs in these recipes: broccoli meatballs, sweet peas pancakes, sole fish cakes, broccoli and potato tots.
      All the above recipes can be easily shaped in small bites or baby finger food shape. Please let me know should you have any question! Ciao ciao! b

    I loved this recipe, thank you! But I’m wondering what coconut milk you use? I only found the can and it seems so much thicker than what you use.

      Hi! I usually find the coconut milk in the fresh dairy section at the grocery store, next to the regular milk or lactose free milk. It’s a fresh milk. As a substitution you might want to try almond milk (if your baby is not allergic to nuts) or goat milk that has a lower lactose amount compared to cows milk. Ciao!! b

    I would like to try out the recipe . Is there an alternative of the agave nectar ? I don’t think I get it in my country

    Hello! Can you freeze any left over cakes? How long do they stay?

      Hi! yes, you can freeze the pancakes. Place a parchment paper in between each of them to keep them separate so that they will be easier to thaw. When you need them simply take the quantity that you need from the freezer and place the pancakes in an oven toaster for 1/2 min. Let me know should you have any more question. Thanks, b
