Purple gnocchi with zucchini – San Valentine recipe

I was looking for something special for San Valentine and I found it at the farmer’s market: purple potatoes. They have a deep violet skin and flesh, originally from South America they are grown locally too. Compared to the traditional white potatoes, they are very rich in antioxidant like berries and pomegranates, that’s why (surprise!!) the purple potatoes has been shown to be an immune system booster, perfect for this time of the year full of running noses, like mine and Luca’s recently 🙂
Potatoes take my imagination immediately to….gnocchi.

An easy traditional Italian recipe that I would like to share with you today with this unconventional color. The dressing for our gnocchi: zucchini, onions and sage. Very delicate and yummy!
I hope your kids will be delighted by the purple color like my Luca did!
