First egg yolk recipe: pastina with zucchini

Usually eggs are introduced in a baby diet at around 9-10 months. Only the yolk. For the egg white it’s better to wait up until 12 months due to potential allergies. The egg white contains at least 5 proteins that might cause an allergy. The yolk contains none, that’s why we start with it. So…we know when to start, but how? today I’m sharing with you the recipe that I prepared for my little Alex when I gave him his first egg yolk. He really liked it and I hope your little one will do the same 🙂

I also use this recipe when someone in the family is sick (maybe a bad cold) as it is very comforting.

We start with the zucchini. Grate them finely in order to reduce the zucchini in a raw puree’.

Divide the yolk from the egg white.

Turn the heat on at medium and place the vegetable broth in a small pan.

When the vegetable broth is boiling, add the zucchini pulp and let it cook for 3 minutes

It’s time to add the pastina and let it cook for the cooking time indicated on the packaging (usually, considering that pastina is a small size pasta, it is something between 5 and 8 minutes).

Which kind of pastina to pick? there are so many shapes and sizes! By the way, “pastina” in Italian means “small pasta” 🙂 My suggestion is to choose the pastina size following your baby’s needs. If he is still in a very smooth and almost liquid diet, a very small pastina size will be fine. If he is already eating small pieces of food a bigger size will be better.

Once the pastina is cooked you can turn off the burner and immediately add the egg yolk and stir for 1/2 minutes. The pasta&zucchini heat will cook the yolk and the stirring will turn the yolk in a cream.

Last touch to give an extra taste: add the Extra virgin oil of olive and the Parmesan cheese and mix.

Et voila’, your first egg yolk recipe is ready to be tasted by your little one.

Recommendations about when giving eggs to babies are changing. Many pediatricians are now suggesting to start with eggs (the whole egg!) even at 6 months. I preferred to follow the safe way and wait 9 months. Check with your pediatrician what you think it is better for your baby!
