Baked red rice balls (arancini di riso al forno) – kids version

Today I was inspired by a delicious Sicilian recipe, “arancini di riso” (deep fried rice balls) and I decided to create a kids friendly version. The final result is not only yummy but healthy! Luca LOVED them (and we did too!!).
Also, I’m using both the Ragu’ sauce and the tomato sauce we did together, I always have a nice stock in my freezer 🙂
By the way, the tomato season is almost over, but there is plenty of time to prepare a nice stock of sauce for the winter!!!

    These look delicious. I have been searching to find a baked recipe because as you mentioned, deep fry is not so healthy. I save those types of dishes when eating out but when I cook at home, I like to keep my recipes as healthy as possible.

    How well do these heat back up for the next day? How hot should the oven be and for how long? There’s only 2 in my household so we certainly can’t eat them all in one sitting. Do you recommend I scale the recipe back for 2 servings each time I bake them or will they reheat well?

      Hi Kazy! I’m the same. At home no frying at all (it’s not healthy and the kitchen smells like “fried” for days!!), when we go out once in a while I’m open to “exceptions”. As it is only two of you and I do not like freezing the arancini (I do not think they keep the texture once frozen) nor eating arancini for three days in a row 🙂 I would suggest to cut the ingredients in half. (1 egg will be fine). Yes, you can reheat them for the next day without any problem. I like placing them for 1 minute or less (pending the quantity) in the microwave so that the inside is warm and than 1 or 2 minutes in the toaster to prevent the crust to get soggy. If you do not have a toaster you can use the oven at 400F for 5 min and I still recommend the microwave before as the inside will be cold with only 5 min in the oven.       Hi Nada, Thanks!! Freezing them before baking is the best way to keep them crispy like the freshly made ones. I would suggest to freeze them for up to 3 months. Ciao! b
